Knotts Boardwalk and New Timber Mountain Log Ride Opening Memorial Day Weekend!
Knott's Berry Farm holds a special place in my heart. I grewup with so many memories there. I can still remember riding the fiesta swings and getting funnel cake to share on one the many daddy daughter dates growing up.
I got a special sneak peek of what's to come this May when Knott's Berry Farm opens a state of the art update to the beloved Timber Mountain Log Ride and Boardwalk area of the park. Debuting Memorial Day weekend, these additions will bring a fresh update to a park steeped in wonderful tradition and heritage.
Crews have been working non-stop and its hard to believe this will all be done and finished by Memorial Day. I can't wait to see how it turns out! Look's to me like it will be like "Goofy's Fly School" at CA Adventure, but bigger and need I say faster?

In the midst of our recent sick days, I received an email from the folks at Fresh Dish asking me if I'd like to try one of their meal kits and share my thoughts. Since our littles love shrimp, we opted for the shrimp fajitas. Because I was busy caring for a sick kid, I didn't even open the box until 30 minutes before meal time. I was hoping it would be as easy as the website said, and it was! Everything I needed was in the box (down to the oil I needed to sautee the shrimp and veggies) and Dinner was ready in 30 minutes from start to finish!
A few pleasant surprises about Fresh Dish:
Fresh Dish is for everyone. Delivered in a box packed with dry ice packs - the ingredients can last on your doorstep virtually all day long (8 hrs I think) - so whether you are a stay at home parent or a work away from home parent, or a professional who works long hours your fresh dish boxes will arrive cold and ready. Fresh Dish appeals to me on so many levels. From choosing the 2 person option for "After-The-Kids-Go-To-Bed-Date-Nights" to busy weeknights when I still want fresh food-but don't have time to spend on prep. Recipe Challenged? Fresh Dish provides easy to follow step-by-step recipe cards for each meal.
You can freeze meals. If you are ordering more than one meal at a time, you can refrigerate and even freeze your meal ingredients for a later time. I love this option for busy weeks when we have a lot going on and might not know which nights we will be home for dinner.
Meat. Lots of it. Usually with prepackaged, pre-prepped meals, companies save money (or ahem make money) by skimping on how much meat per serving they include in each dish. My husband would like to personally thank Fresh Dish for not skimping on the meat and fully satisfying his hunger.

Breakfast Ideas For Kids
Fresh fruit, yogurt and bagel bites make for a fun breakfast idea for young kids. It's easy to piece together a little of this and a little of that. My sweet girl loves bagels and we recently picked up some bagels from Fresh and Easy when they we giving them away (yes, you read that right) for their daylight savings promotion. While there, I picked up some fresh strawberries and grapes on sale. I cut the bagels into triangles just for fun. We have been on a little bit of a European style food kick lately, lazily grazing on large plates of food. It's not how we eat all the time, but it sure is fun.

Escape To Planet Earth in Theaters February 15th + Giveaway
My family was invited to get a sneak peek of the new movie "Escape From Planet Earth" in 3D starring an all star cast including Brendan Fraser and Jessica Alba. As soon as I got the invitation, I had the kids watch the Escape From Planet Earth trailer and we all laughed hysterically.
Here's a little synopsis that was provided to me:
The 3D animated family comedy catapults moviegoers to planet Baab where
admired astronaut Scorch Supernova (Brendan Fraser) is a national hero to the
blue alien population. A master of daring rescues, Scorch pulls off
astonishing feats with the quiet aid of his nerdy, by-the-rules brother, Gary
(Rob Corddry), head of mission control at BASA. When BASA’s no-nonsense
chief Lena (Jessica Alba) informs the brothers of an SOS from a notoriously
dangerous planet, Scorch rejects Gary’s warnings and bounds off for yet another
exciting mission. But when Scorch finds himself caught in a fiendish trap
set by the evil Shanker (William Shatner) it’s up to scrawny, risk-averse Gary
to do the real rescuing. As the interplanetary stakes rise to new
heights, Gary is left to save his brother, his planet, his beloved wife Kira (Sarah
Jessica Parker) and their adventure-hungry son Kip (Jonathan Morgan Heit).
What the kids thought:
The muffin tin kids loved this movie. I kept looking over at them laughing and smiling through the whole thing. Afterwards they kept chatting about the funny parts and their favorite moments like when Gary gets a brain freeze after drinking the Slurpee. Their favorite character was Doc the alien mouse. They also wanted to download the Escape To Planet Earth movie app right away.
My thoughts: Rated PG, this is a great movie for kids 5 and up. It was funny, engaging and the music was fun for both kids and parents. I loved the overarching message of courage, doing what's right, and the importance of family. Several times during the movie, Gary chooses doing what's right over doing what's easy and sacrifices himself for the good of his brother and alienkind. Two thumbs way up!
Escape From Planet Earth opens in Theaters nationwide this Friday, February 15th.
